
Falafel

Makes about 20 Falafel patties
• 1.5 cup dried peeled fava beans (Foole Majroosh)
•
1/2 cup dried chickpeas
•
1 cup chopped green onions
•
2 Tbsp minced garlic
•
1 Tbsp Cumin
•
1 tsp Baking Powder
•
2 tsp salt
•
Black pepper to taste
•
1/2 cup finely chopped parsley
•
1/2 cup finely chopped coriander
•
Oil for frying
Soak the Fava beans and Chickpeas for 12 to 24 hours. Drain the beans.
In a food processor chop the beans till very fine.
Add all the remaining ingredients to the food processor and process
to a nice coarse paste.
Heat oil in a pot , form the falafel into discs and drop directly
into the oil. Fry on both sides till deep brown. Remove and drain on
a rack.
